Green Apple Salad Recipe

 

For the dressing, combine olive oil, apple cider vinegar, honey, Dijon mustard, and sea salt. Add pepper to taste.

Cut apple into matchsticks. Place matchsticks, pepitas, dried cranberries, and feta cheese on top of the spring mix. Drizzle dressing over assembled salad. Makes 2 dinner salads or 4 side salads. Pairs well with a warm fall soup.

Salad

  • 8 oz Fresh ‘n Crisp Farms Spring Mix

  • 1 large green apple

  • ¼ cup pepitas

  • ¼ cup dried cranberries

  • 1/3 cup feta cheese

Apple Salad Vinaigrette

  • ¼ cup extra-virgin olive oil

  • 1 ½ tablespoons apple cider vinegar

  • 1 ½ teaspoons honey

  • 1 teaspoon Dijon mustard

  • ¼ teaspoon fine sea salt

  • Freshly ground black pepper, to taste
